At the heart of the concept is a deep respect for the ingredient - dishes that appear deceptively simple yet celebrate the finest seasonal produce at its peak.

The tasting menu changes every few days, based on the best ingredients available. Here's an idea of what you can expect...

Kick things off with dishes like late-season tomato with tokoroten, followed by October in Four Bites, an exquisite selection of the month's best seasonal ingredients, then poached Lindisfarne oyster with sherry & Yuzu Kosho butter & toasted walnut.

Next, there are dishes like world-class Balfegó tuna with roasted leek, avocado, and Kinako, Andignac duck liver with cranberry and milk bread, and Scottish Langoustine with ginger & wild mushroom. Plus, "Cioppino", a seafood stew with Cornish turbot, saffron & razor clams, and a showstopping fallow deer venison with black truffle & blackberry.

To finish, indulge in Solliès figs with miso, yuzu & white sesame.
