Their 9-course "Long Tasting Menu" is a feast for the senses. Constantly evolving with the seasons, it's an absolute masterclass in modern gastronomy, drawing deeply from Victor's years in Japan and his experience in other top-class kitchens around the world.

At the heart of the concept is a deep respect for the ingredient - dishes that appear deceptively simple yet celebrate the finest seasonal produce at its peak.
Kick things off with dishes like sweet Marinda tomato in a delicate Sakura miso broth, followed by September in Three Bites, an exquisite trio of the month's best seasonal ingredients, then melt-in-the-mouth Mr Tanaka's Tuna with a leek and elderflower consommé.
Next, there's a delicate Amadai with Ikura and Langoustine, XXL Dayboat Scallop, served with oxidised wine, fig leaf & caviar, New Zealand’s Abalone with smoked Yukon gold, truffle and hon shimeji, and a showstopping A5 Kobe Wagyu with morel and Saikyo miso.
To finish, indulge in Yamagata Cherry and a selection of bite-sized sweet treats to end your meal on a high.
